Yam, Zucchini, and Chickpea Salad

While I enjoy the occasional salad-bar salad or panini, I find that bringing my lunch to work is often healthier and more cost-efficient than the alternative. Especially since I work in Georgetown, where lunch joints are pretty high-end, and (as you all surely know) I'm not the biggest fan of Subway, bag lunches are my speed.

As someone who routinely brings my lunch to work, and I'm always on the lookout for recipes that are simple to make, easy to nuke or tasty at room temperature, and pack in servings of carbs, vegetables, and protein. Needless to say, there are plenty of these recipes floating around the blogosphere, which has given me ample opportunity to experiment. yam-chickpea-salad-2

I was poking around on 101 cookbooks, which is a truly fabulous source for healthful and vegetarian recipes, and I found this chickpea and zucchini stir-fry recipe that looked great: lemon was the main seasoning ingredient, and the flavors looked clean and fresh. I'd been chomping on the recipe for a few days, mentally adding a few more elements and dressing up the whole thing a bit more complexly. Yams for sweetness and substance, scallions and parsley for color, "green" flavor and bite, and tahini and garlic to add to the lemon for a thicker, protein-filled dressing. I also figured I'd slow-roast the vegetables in order to caramelize them.

The resulting salad was everything I look for in a pack-your-own lunch dish: it had plenty of carbs and protein, pronounced caramel undertones from the browned vegetables, and a tangy, nutty bite. Honestly, I could take this for lunch several days in a row and not get bored (much like the cauliflower I took last week). In fact, I took it last Friday and yesterday, and I'll be taking it again, you can bet on it.

Yam, Zucchini, and Chickpea Salad inspired by 101 Cookbooks

For the salad:

2 yams or sweet potatoes, diced into 1-inch pieces 1 zucchini, diced into 1-inch pieces 1 can chickpeas, rinsed and drained 2 garlic cloves 3 sprigs parsley, leaves finely chopped 2 scallions, thinly sliced on bias olive oil

For the dressing:

1 tablespoon tahini zest and juice of 1 lemon salt and pepper 1 tablespoon olive oil

Preheat oven to 400 degrees. Line rimmed baking sheet with parchment or silicone.

Spread diced sweet potatoes in a single layer on prepared baking sheet, drizzle with olive oil, and sprinkle lightly with salt and pepper. Roast 35-40 minutes, then add zucchini and roast an additional 10-15 minutes, until both vegetables are softened inside and caramelized in spots. If vegetables haven't caramelized at that point, pop them under the broiler for 3 minutes, and they'll brown plenty.

In a small frying pan over medium heat, saute chickpeas and whole garlic cloves in 1 tablespoon of olive oil (just enough to moisten) for about 3 minutes, until the chickpeas dry out a bit and are warmed through. Remove garlic cloves, chop finely, and reserve for dressing.

In a medium bowl, mix chickpeas with yams and zucchini. Add parsley and scallions, and toss to combine.

In a small bowl, combine tahini, lemon juice and zest, olive oil, and half of chopped garlic. Add water by the teaspoon until the dressing is smooth and runny. Taste, and add additional chopped garlic if necessary. Add salt and pepper to taste. Pour over vegetables, toss to coat, and serve warm or room temperature.

Another Caponata Recipe

2caponata1 I know I've posted caponata on the blog before, but it's such a go-to recipe that I'm not surprised to see it up here again. Caponata is easy to make, very flavorful, and a true crowd-pleaser, even among the most carnivorous eaters. I made it this time as my contribution to a potluck lunch at work in honor of a colleague's last day, and was quite surprised by how popular it was with the meat-lovin crowd. I promised them I'd post the recipe, so even though I've already got a caponata recipe on the blog, here's one more. 2caponata3

This one takes its inspiration from a favorite dish that my mom used to make, called Huachinango a la Veracruzana, or Red Snapper, Veracruz style. It's essentially a whole red snapper (we used filets), baked in a tomato sauce that's laced with jalapeno peppers, green olives, capers, and raisins, and spiked with cinnamon. The flavors are assertive but balanced, and the dish is really tasty. I basically substituted eggplant for the snapper, and held the olives but put in some olive juice to lift the other savory flavors. I also had been eating too many jalapenos, so I subbed in chili flakes instead. If you've got green olives, they'd go great in this dish. I also browned the tomato paste in its own pan to make its flavor more complex, though that step is totally optional.

One of the best things about a chunky caponata like this one is that in addition to being a dip, to be eaten on crackers or baguette, it can double as a pasta sauce. I spooned some if it on top of some whole wheat rigatoni and topped it with feta cheese for an easy and tasty lunch.

This caponata also helped break a slightly frustrating cycle where everything coming out of my kitchen was just so-so. I leaned over this caponata pot, smelled its strong tomato and onion aromas, and thought, oh yea. This is gonna be good.

How good? Good enough that I ate it on pasta the next day.

Another Eggplant Caponata Recipe

olive oil, about 1/4 cup 6 garlic cloves 1 onion, coarsely chopped 1/2 tsp cloves 1 tsp cinnamon 1/2 tsp paprika 1/2 tsp chili flakes 1/2 tsp. cumin 1 tsp. coriander seeds, optional 2 eggplants, cubed into 1-inch pieces 2 Tbsp capers 1/2 cup tomato paste 1/3 cup raisins 1 1/2 cups water several leaves chopped fresh basil, optional 1 tsp dried italian spices (basil, oregano, etc) -- I use Penzeys Tuscan Sunset 1 Tbsp date honey (regular honey is also fine) 1/3 cup green olive juice (can also add 1/3 cup olives, if desired) 1 red bell pepper, coarsely chopped

In a large soup pot, heat olive oil on medium heat. Add onion and garlic; stir to coat, and cook for 3 minutes, or until translucent. Add all spices, toss to coat onions, and cook 2 minutes more. Add eggplant, stir to incorporate, and cook about 5 minutes until eggplant starts to soften and brown in spots.

(If you want to brown the tomato paste in a separate pan before adding to caponata, do so now. Put tomato paste in a small pan over medium heat, mush around, and cook about 5 minutes, until the bottom of the pan starts to turn brown. Add 1/2 cup water and, using a wooden spoon, scrape up the brown bits (called fond) into the tomato liquid. When all the fond has been incorporated into the tomato liquid, add the whole thing into the caponata along with the remaining 1 cup water. If not browning tomato paste, simply add it and all the water to the caponata. Stir to incorporate.

Add all remaining ingredients except for red pepper, stir to combine, and allow to simmer over medium-low heat for about 45 minutes, until well-incorporated. Now -- here's the tricky part -- taste it. Does it need more salt? More spice? Is the sweetness of the raisins and honey coming through enough for your taste? Add with a light hand in whatever direction you see fit, and continue to taste and adjust until what's in the pot makes you happy. Then add the red pepper pieces, and cook 15 minutes more.

Caponata will keep for at least 1 week stored in an airtight container in the fridge.

Braised Sweet and Sour Red Cabbage

cabbage1.jpg Not too long ago, I walked into my parents' house and immediately caught wafts of the most fantastic aroma coming from (as always) the kitchen. I started sticking my fingers into each of the dishes sitting on the dining room table, eager to find the source. After trying most everything else on the table, I nonchalantly scooped up a pinch of cooked red cabbage, thinking not even a little that it might actually be the culprit. Boy, was I surprised. Divine, I tell you! And I don't use that word all too often...but this truly is a recipe for the ages.

Turns out, it's also dead simple; go figure. At my persistent begging, my mom passed along the recipe she'd used to make it. I tweaked it, as I am often wont to do, because when I see an ingredient in the fridge and think it might add something, I've no self control, not even an ounce. And while sometimes that habit ruins otherwise tasty cooking (insert gross story here), other times, I'm rewarded for my impulses. This cabbage most definitely benefited from my hyperactive ingredient-adding tendency.

According to the basic recipe (which itself is quite lovely), red cabbage cooks until soft and fork-tender in a mix of tomatoes, red wine vinegar, sugar, onions, and raisins. Out of raisins, I used dried cranberries, which were nice (though I think I'd try it with raisins next time, since I bet they're just dandy). I also added more than a splash of dry red wine, which gave the dish noticeable depth of flavor and helped cut the straightforward sweet-sour dichotomy with a hint of bitterness. I also subbed in red onions for the yellow onions in the original recipe, because that's what was lying around my house. Red onions also have a slight bitterness to them, which wasn't obvious to my dull palate but may have done some good (who knows?). Last but not least -- here's the real show-stealer -- I added a generous sprinkling of pomegranate seeds to the finished dish, just before serving. Their ruby-red color and gem-like shape lent a decadence to an otherwise homey dish, their tangy-sweet flavor mingled lovely with the cabbage juices, and their crunch gave the final product important textural contrast. Needless to say, I was happy with the outcome -- and the dish got overwhelming positive feedback from my lunch guests (one of whom is notoriously, um, selective -- love you, T!) I'll be making this dish when pomegranates are available as much as possible.

Braised Sweet and Sour Red Cabbage

1 apple, chopped 1 red cabbage, sliced pretty thinly 2 cups onions 3 cloves garlic 1 tsp olive oil 3 or more cups water 3 cups tomatoes (I used canned) 2/3 cup raisins or craisins 1/2 cup plus a couple Tbsp. red wine vinegar 1/2 cup sugar or brown sugar salt and pepper 1/2 cup dry red wine, to taste the seeds of 1 pomegranate

In large pot, saute onion and garlic in olive oil over medium heat until translucent and fragrant. Add cabbage, 2 cups of water, and remaining ingredients except pomegranate and salt. Cover and ignore. Seriously. You want the cabbage to soften and break down a bit, and the other flavors to meet and mingle. Check occasionally, and add water as needed to prevent sticking. In all, the cabbage should take about an hour; you want it really soft and fragrant, and you want the scent to be mellow and rich. Promise -- it's really delicious when it's finished. Season with salt and pepper to taste.

At this point, you can store the cabbage in the fridge for up to two weeks or in the freezer forever (did I just say that?)

Immediately before serving, sprinkle the pomegranate seeds overtop and toss to incorporate. You won't be sorry.

LocalSeasonal Take 1: Caponata

caponata1.jpg If I may say so myself, tonight was a smashing success. A whole day into my challenge and I'm still thrilled that I took it on! On the menu this evening was kalamata olive sourdough bread from the market, homemade eggplant caponata, and greens with heirloom tomatoes, feta, and red onions that I pickled in fresh-squeezed lime juice till they turned a beautiful shade of purple.

Some thoughts on preparing and eating tonight's dinner:

  • This is really the clincher, I think -- everything just tasted so fresh. The heirlooms were bursting with juices, like perfect summer tomatoes should. The greens -- a mixture of spinach and arugula, also from the market -- were beautiful and quirkily shaped, not like th uniformly-chopped salad greens you can by at the store. They were also super fresh, the arugula nice and spicy. Even the caponata, which I made with tomato sauce that I cooked up this weekend, tasted fresh. It doesn't take much to sell me on the virtues of maximizing fresh produce in my cooking, now does it?
  • The irony about cooking and preparing such fresh produce is that while my mouth waters at the site of my farmers market bounty far more than it does with the contents of a Safeway grocery run, I also eat so much more slowly when what's on my plate smacks with fresh-homemade-ness. When the food isn't fresh, or isn't in season, or for some other reason doesn't taste its best, I tend to just shovel it in and scarf it down mindlessly. When dinner is as fantastic as it was tonight, I find myself savoring every bite, thus feeling full earlier and eating less. I made like the French tonight -- I ate 1 slice of bread, 1 ladleful of caponata, and 1 helping of salad; and I didn't go back for seconds.

  • There's something sensual about cooking with local, seasonal ingredients. For one thing, they're more delicate. I wash them, dry them, chop them, and generally handle them with far more care then when I'm chopping up a couple winter tomatoes (which I hope to buy less, by the way). Time with myself in the kitchen has always been therapeutic and restorative for me; all the more so when I'm working with the best produce summer has to offer.
  • Some of you no doubt are thinking that I picked a mighty convenient time to do this -- at the height of summer's produce boon. And you'd be right! No way around that. But I will say that there are few things I love more than a good winter stew -- and there are few things more comforting to cook as well. So without making any promises, I imagine that I might take away from this experience a desire to eat seasonally even when the season has limited produce to offer.

Are any of you out there trying this or something like it? If so, do share your stories! For now, here's a blueprint for the caponata I made tonight. As I made it by taste-and-adjust, there's no precise recipe. You'll just have to get in there and try it yourself. :)

Caponata

Olive oil (at least 1/4 cup) 1 medium to large eggplant, firm and shiny, in 1-inch cubes 1 1/2 cups tomato sauce or crushed tomatoes 1 small red or yellow onion, chopped 1 stalk celery, chopped very fine 4 cloves garlic, peeled and kept whole 2 Tbsp capers 1/3 cup raisins, dried cranberries, cherries, or currants 1 cup white wine 1/4 cup white wine or cider vinegar several sprigs of mint dried marjoram, oregano, tarragon, or other herbs salt and pepper chili flakes

In a heavy bottomed large saute pan, heat a healthy dose (a few Tbsp) olive oil on medium-high. Add eggplant and toss around the pan, allowing to scorch in places, about 4 minutes. After the eggplant is browned and softened a bit, remove and place into a bowl off the heat. Add a few more Tbsp of oil, turn heat to medium-low, and add onions and garlic, allowing to cook just until they start to brown. When that happens, add the celery, brown a bit, then add eggplant back into the pan, and add a bit of the wine, just to deglaze the bottom of the pan. Add the tomato sauce, and toss or stir to coat. Add the herbs, the capers and the dried cranberries/raisins/whatever, as well as a bit more of the wine (total about 2/3 cup). Cover the pan and allow to simmer, on low heat, for at least 20 minutes until the garlic is soft and mushy, the raisins/cranberries are plumped a bit, and the eggplant is soft. From here on out, it's a game of taste and adjust. If needed, add more wine. If the flavoring tastes right to you, just add water if you need to thin it out. Add salt and pepper to taste.

Serve room temperature, hot, or cold, with sliced [I like toasted] crusty bread, and perhaps a few cheeses.

Price Information: eggplant from the farmers market, 1.69 per pound 1.67 per eggplant at the store beefsteak tomatoes from the market, 2.50 per pound 1 dollar each at the store greens from the market, 5 dollars for half a pound 6 oz. for 3.79 at the store -- about equal heirloom tomatoes from the market, 3.99 per pound not available at my store herbed feta cheese, 9.75 per pound at the market 8.58 per pound and nowhere near as good! half a kalamata sourdough at the market, 2.50 price varies -- can you get half a loaf at your store?

On balance, I definitely think I came out ahead here, and the price differential is slim to none in most cases. Food for thought...
